Keto Mac & Cheese - MY FAV!
Comfort food. Cheese. Macaroni and cheese. It doesn't get better than a homemade macaroni and cheese dish - right?! Except, we don't do carbs! Enter - cauliflower: my saving grace! I cannot tell you how much I love to use cauliflower as a substitute for pasta, potatoes, and bread.
I love to make my own cheese sauces and this is a nice an easy recipe that you can whip up as a delicious side dish for any meal! You could also make this "buffalo" style by adding 1/4 - 1/3 cup of your favorite hot sauce!
Below is my favorite recipe! This makes 8 servings and will net 250 calories, 4.2g net carbs, 9.8g protein, 22g fat per serving!
Cauliflower Mac Base
Cheese Sauce
I love to make my own cheese sauces and this is a nice an easy recipe that you can whip up as a delicious side dish for any meal! You could also make this "buffalo" style by adding 1/4 - 1/3 cup of your favorite hot sauce!

Ingredients
cauliflower
6 cups cauliflower (one to two heads)
bacon
2 slices bacon thick cut
Onion
¼ onion
garlic
2 cloves garlic finely chopped
butter
2 tbsp Butter
shredded cheddar cheese
1 cup Cheddar Cheese shredded
Heavy Whipping Cream
¾ cup
Salt & Pepper
salt/pepper To Taste
shredded cheddar cheese
1/2 cup Cheddar Cheese shredded
pork rinds
1/2 oz Pork Rinds crushed
Parmesan Cheese, Dry (grated)
3 tablespoon, grated
- Preheat your oven to 425 degrees.
- Chop up your bacon (I like a nice dice) and cup the cauliflower into "macaroni" sized pieces. You can do this by hand by I use a knife so that I get less of the stalk which has more carbs.
- Heat a large skillet on medium heat.
- Add your bacon and cauliflower to the skillet and allow to cook for 5 about minutes, or until the bacon is almost fully cooked. You don't need any added fat because of the bacon.
- Finely dice your onion, mince the garlic and add these items to the skillet.
- Cook for 10 more minutes or until the cauliflower is cooked and the onions are translucent. I like when my cauliflower is just below al dente so that it cooks to perfection in the oven.
Cheese Sauce
- Combine butter, cheddar cheese (1 cup), parmesan, and heavy cream in a small saucepan.
- I also really like to add some parsley to my sauce!
- Cook on low heat until everything is melted and combined. Add your salt and pepper.
- Pour the cheese sauce over top of the cauliflower base and mix everything together.
- Pour into an 8x8 or 9x9 dish.
- Top with crushed pork rinds and the rest of your cheddar cheese.
- Bake at 425 for 10 minutes and then broil for 3-5 minutes to crisp up the topping.
