Yummy summer side salad!

So at a recent cookout with great friends I tried this awesome and refreshing summer side salad. I am always looking for new recipes to share with the fam. My hubby even liked this salad which says a lot because he is so darn picky! He was scared to try it but he loved it!
So I got it from my friend Shari - Broccoli and Ramen Noodle Salad. I will post the link to the original recipe at the end of the post because I changed it up a bit.

Ingredients

  • 1 (16 ounce) package broccoli coleslaw mix
  • 2 (3 ounce) packages chicken flavored ramen noodles
  • 1 cup unsalted peanuts
  • 1 cup sunflower seeds
  • 1/2 cup white sugar
  • 1/4 cup vegetable oil
  • 1/3 cup balsamic vinegar


Directions

  1. In a large salad bowl, combine the slaw, lightly cooked & drained ramen noodles (don't cook with the seasoning).
  2. Whisk together the sugar, oil, vinegar and ramen seasoning packets. Pour over salad and toss to evenly coat. Refrigerate until chilled; top with peanuts and sunflower seeds before serving.

The original recipe calls for cider vinegar which I replaced with balsamic. It also says to use raw ramen noodles. I don't like to because it takes forever to have them soften up and breaking up the hard noodles is a pain! It also calls for green onions which I suggest eliminating completely. Made the salad way too onion flavored. If you like green onions I suggest using a 1/4 of what the recipe calls for at the most because they are so pungent.
